An Appreciation Lunch...

Every month at my sons school we show appreciation for our faculty by providing a nice luncheon for them. Parents volunteer to help. It's such a special way to say "Thank You" for all they do!  

Lisa, Barb and I provided lunch today! 

My part was to make the Chicken Curry Salad Croissant Sandwiches.

Here is a photo journal of what I did...i made enough for 25 small croissant sandwiches
   
~ CHICKEN CURRY CROISSANT SANDWICHES ~

bake boneless chicken breast @ 350 for 30 min drizzling w/olive oil and
course salt and pepper. Once cooled chop into bite size pieces.  
  Add diced celery
 Add sliced red grapes
 Add finely chopped red onion (not too much just enough to flavor, but not over power)


 combine celery, grapes, onions
 Add mayonnaise (amt is your personal preference) salt and pepper to taste
and at least 1 tbs of curry was used for this large amount i was making.

combine and stir together (i did this the night before the event, giving it
enough time for the flavors to combine nicely)

 slice one side open (do not disconnect top from the bottom)

 Add sliced almonds right before putting the sandwiches together (keeps them crunchy)
 green leafy lettuce and platter ready...

 put your sandwiches together (lettuce on bottom)

 enough to feed an army of educators!

I garnished the plate with bite sized bunches of grapes for easy serving

LUNCH IS SERVED !

*Chicken Curry Croissant sandwiches
*Soup choices:  minestrone and pasta fazool
*Fresh strawberries and cream
*Old fashion lemonade
*A fruited Angel food cake

A Grand Prize Game was Played~ too
We had the teachers guess how many skittles were in the jar on the table and the 3 closest to the exact number WON one of the three vases of Flowers to take home which are seen on the table in this picture!

Teachers can never hear "THANK YOU " enough for all they do!
